Ingredients of Dum Biryani
- Rice (basmati ) – 250 gram
- Potato – 8 to 12 pieses (small)
- Onion – 2 pieces
- Tomato – 2 pieces
- Green chilli – 3 to 4 pieces
- Curd – 1 cup (medium)
- Ghee – 3 to 4 tbps
- Butter – 3 tbps
- Cumin seeds – ½ tbps
- Mustard seeds – ½ tbps
- Asafoetida – ½ tbps
- Mint leaves – 2 to 3 tbps
- Cinnamon stick – 2 to 3 pieces
- Green cardamom – 2 to 3 pieces (roasted)
- Black cardamom – 2to3 pieces
- Cloves – 3to4 pieces
- Black peppers – 3 to 4 pieces
- Red chilli powder – 1 ½ tbps
- Coriander powder – 1tbps
- Turmeric powder – ½ tbps
- Garam masala – ½ tbps
- Salt – 1 tbps
- Green coriander – 2 to 3 tbps
- Milk – ½ cup
- Saffron (keser) – 10 to 15 leave
Making of Receipe of Dum Biryani
Step 1) Rice Cooking
Take rice and wash it properly. Soak it in water for 1 ½ hour. Take a big pan add 1 ½ liter waster and allow to boiled it. Add 1 tbps salt, 1 tbps ghee, cinnamon stick, green cardamoms. Mix all properly. Remove excess water form rice and put it in boiled water. Now we Cook rice on medium flam for 10 to 12 min. cook rice at least 85 to 90 %. Konw turn of gas and filter rice. Remove excess water form rice. Rice is ready.
Step2) Making Dum Aloo
Take all small potato and it properly. Boiled potato atleat 50%. Take a pan add 4 to5 tbps oil and allow ot heat it. Know we add potato and fry form all side until it become golden brown form all side. Take out potato form oil and put it on plate.
Step3) Making Masala
Take curd add red chilli powder, coriander powder, turmeric powder, salt, garam masala, ginger paste, garlic paste and mix it properly. Take onion, tomato, green chili and cut it .
Take milk add keser and leave it for 10 to 20 min.
Step4) Making gravy
Take a pan add butter, oil and allow to heat it. Add cumin seeds, mustard seeds, asafoetida, black cardamom, cloves, black peppers and tamper it. Now we add green chilli, onion, tomato and fry for 1 to 2 min. Than add curd paste, mix and fry it for 4 to 5 min on low flam until oil or butter floating on top of pan. that add dum potato in gravy. Cook gravy for 3 to 5 min on low flam. Know we add ½ cup of water and mix it properly. Boiled gravy and add green coriander, mint leave. Turn off flam and gravy is ready.
Step5) Steaming Biryani
Take a pressure cooker and place it on gas turn on gas. We add half amount of aloo gravy in cooker and after that speared half amount of rice on gravy. dd remaining aloo gravy and after that remaining rice. Add kesar milk, chooped green coriander. Close cooker and cook for 10 min on low flam. Turn of gas. Leave cooker for 10 min. Open cooker and than Aloo Dum Biryani is ready.
Serve this hot with raita, chips etc.
